Makes ~25-30 cookies
- 1 lb. Almonds ground to a powder
- 4 Egg whites
- 2 1/4 cups Powdered sugar
- 1 tsp. Baking powder
- Heat oven to 375°F.
- Whip up egg whites to peaks.
- Fold in powdered sugar and baking powder.
- Fold in almonds.
- Line a heavy cooking pan with parchment paper.
- Put a tablespoon of the batter on the pan for each cookie. (6-8 cookies per sheet)
- Cook for 10-12 minutes. Replace the parchment paper every so often.
