Sweet and Sour Meatballs
Serves 2-3
Ingredients - Meatballs
- 1 tsp. Salt
- 1 1/2 lb. Ground Meat
- 1/2 cup Matzo Meal
- Dash Pepper
- 1 Finely chopped onion
- 2 Eggs
Ingredients - Sauce
- 1 tsp. Salt
- 1 Small can cranberry sauce
- 1 cup Water
- 1 cup Tomato juice
- 1 tsp. Lemon juice
Directions
- Mix sauce ingredients in a good-sized pot. Mash the cranberry sauce.
- Bring to a boil and let simmer while preparing meatballs. Whisk the sauce to break up all the cranberry sauce.
- Combine all meatball ingredients except the Matzo Meal and shape into meatballs.
- Roll each meatball in Matzo Meal and place on wax paper.
- When they are all shaped, put them all in the boiling sauce.
- Turn down to a simmer and cover and cook for 1 ½ to 2 hours.
- Add a little brown sugar if you prefer it sweeter.
