Serves 2-3

Ingredients - Meatballs

  • 1 tsp. Salt
  • 1 1/2 lb. Ground Meat
  • 1/2 cup Matzo Meal
  • Dash Pepper
  • 1 Finely chopped onion
  • 2 Eggs

Ingredients - Sauce

  • 1 tsp. Salt
  • 1 Small can cranberry sauce
  • 1 cup Water
  • 1 cup Tomato juice
  • 1 tsp. Lemon juice

Directions

  1. Mix sauce ingredients in a good-sized pot. Mash the cranberry sauce.
  2. Bring to a boil and let simmer while preparing meatballs. Whisk the sauce to break up all the cranberry sauce.
  3. Combine all meatball ingredients except the Matzo Meal and shape into meatballs.
  4. Roll each meatball in Matzo Meal and place on wax paper.
  5. When they are all shaped, put them all in the boiling sauce.
  6. Turn down to a simmer and cover and cook for 1 ½ to 2 hours.
  7. Add a little brown sugar if you prefer it sweeter.
