Ingredients
- 6 artichokes, cleaned and quartered
- 8 cloves garlic
- 1 medium onion, halved and sliced end to end
- 1 cup white wine
- 2 cups chicken or vegetable stock
- 6 Tbsp. olive oil
- ¼ tsp. red pepper flakes
- ¼ tsp. dry thyme
- 1 Tbsp. chopped parsley
- Salt and pepper to taste
Method
- Keep artichoke quarters in acidulated water until ready to use.
- Heat olive oil in a large pan over medium heat.
- Add garlic and cook until fragrant, about 1 minute.
- Add onions and red pepper flakes and cook until softened.
- Drain artichokes and add to pan. Sear until slightly browned.
- Add wine and reduce by half.
- Add stock and thyme and bring to a boil.
- Reduce to a simmer, cover, and cook for 30 minutes.
- Garnish with parsley and serve.
