Ingredients

  • 6 artichokes, cleaned and quartered
  • 8 cloves garlic
  • 1 medium onion, halved and sliced end to end
  • 1 cup white wine
  • 2 cups chicken or vegetable stock
  • 6 Tbsp. olive oil
  • ¼ tsp. red pepper flakes
  • ¼ tsp. dry thyme
  • 1 Tbsp. chopped parsley
  • Salt and pepper to taste

Method

  1. Keep artichoke quarters in acidulated water until ready to use.
  2. Heat olive oil in a large pan over medium heat.
  3. Add garlic and cook until fragrant, about 1 minute.
  4. Add onions and red pepper flakes and cook until softened.
  5. Drain artichokes and add to pan. Sear until slightly browned.
  6. Add wine and reduce by half.
  7. Add stock and thyme and bring to a boil.
  8. Reduce to a simmer, cover, and cook for 30 minutes.
  9. Garnish with parsley and serve.
