Ingredients

  • 1¼ lbs. boneless, skinless chicken breasts, cut into 1” pieces
  • 1 cup finely chopped onion
  • 2 garlic cloves, minced
  • 2 Tbsp. balsamic vinegar (or 1½ Tbsp. red wine vinegar)
  • 1 tsp. Dijon mustard
  • 2 Tbsp. olive oil
  • ¼ cup chopped fresh basil (optional)
  • Salt and pepper to taste

Method

  1. Heat a heavy large skillet over medium-high heat.
  2. Add onion and garlic and sauté until just tender, about 4 minutes.
  3. Add chicken and cook until browned, stirring constantly, about 3 minutes.
  4. Stir in vinegar and mustard. Continue cooking until chicken is cooked through, stirring constantly, about 3 minutes.
  5. Season with salt and pepper. Sprinkle with basil if desired.
